This weekend, Money Saving Mom and Life as Mom are hosting a Freezer Cooking Day for the month of February. The idea is: you take a day to cook meals ahead of time, freeze them, and then you have some ready-made breakfasts, lunches, and dinners to pop in the oven and be done with! I have followed some of their other Freezer Cooking Days, but never felt up to the challenge. Well, this time I think I am ready!
There are so many nights when the last thing I want to do is get in the kitchen and bust out everything in the pantry. This is especially true because we don't like to eat early but our baby eats at 6:30, plays at 7:00 and goes to bed at 7:45. Which means I don't get in the kitchen until like 8 p.m. 8:00 is not a good time to be whipping up a casserole, especially at 5 months pregnant. It tends to be a good time to order a pizza, however. Having something ready to go in the freezer is going to be key.
I am starting small, as I have never done this before. Here is the agenda:
- Baked Shells Casserole
- Mexican Casserole
- Hamburgers
- Waffles
- Cinnamon Pecan Waffles
- Cranberry Pecan Waffles
